Avocado Cilantro Salad Dressing

This avocado and cilantro salad dressing is super easy to blend up in a hot minute! It is also a great use for avocados and fresh cilantro that are past their short prime. Instead of tossing out your slightly brown avocado and wilted cilantro, toss them into the blender with a little plant-based milk, lime juice (lemon works too,) and a few seasonings.

I love this dressing on my daily Big Green Salad, as well as tacos, wraps, and bean burgers.

Refrigerate the dressing in a small jar or airtight container for up to one week, or freeze it in an ice cube tray for future use or for packing in your lunch.

Note: Your dressing may turn out darker green than the recipe photo depending upon the ripeness of your avocado.

Ingredients
  • 1 avocado
  • 1/2 cup fresh cilantro leaves and stems
  • 3/4 cup plant-based milk
  • 1 tbsp lime juice
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp garlic powder
  • 1 shallot, or 1/2 tsp onion powder
Directions
  • Step 1 Add all ingredients to a blender and blend until smooth.
  • Step 2 Transfer to a glass jar or airtight container and refrigerate up to one week, or freeze in an ice cube tray.
