This lentil and kale soup is easy, quick, cheap and packed with protein, fiber, and vitamins!
With only 7 ingredients, you can easily throw it together after a busy day, or start it in your crockpot before work.
Lentil and Kale Soup
- 1 cup dry lentils
- 4 cups vegetable broth
- 2 cans fire-roasted tomatoes (or regular diced tomatoes)⠀
- 1/2 cup chopped onions
- 2 tsp minced garlic (2 cloves) or 1 teaspoon powdered⠀
- 1 tbsp Italian seasoning
- 1 bag chopped organic kale, or one bunch, cleaned and chopped⠀
- Bring vegetable broth to boil in a large stockpot. Add remaining ingredients except for the kale, and reduce heat to medium-low. Simmer 20 minutes until lentils are soft. Stir in kale. The heat will cook it quickly. If the soup is too thick, add 2 cups water and adjust seasonings to taste.⠀
