Lentil and Kale Soup

Ingredients
  

  • 1 cup dry lentils
  • 4 cups vegetable broth
  • 2 cans fire-roasted tomatoes (or regular diced tomatoes)⠀
  • 1/2 cup chopped onions
  • 2 tsp minced garlic (2 cloves) or 1 teaspoon powdered⠀
  • 1 tbsp Italian seasoning
  • 1 bag chopped organic kale, or one bunch, cleaned and chopped⠀

Instructions
 

  • Bring vegetable broth to boil in a large stockpot. Add remaining ingredients except for the kale, and reduce heat to medium-low. Simmer 20 minutes until lentils are soft. Stir in kale. The heat will cook it quickly. If the soup is too thick, add 2 cups water and adjust seasonings to taste.⠀
